Carnosic acid is a natural benzenoid abietane diterpene isolated from rosemary (Rosmarinus officinalis). It acts as an antioxidant and lipid peroxyl radical scavenger, protecting biological tissues and food products from oxidative decay. It is used as a preservative in food and cosmetic products. Its structure features a tricyclic diterpene framework with two phenolic hydroxyl groups.
