Sesame protein

Sesame protein encompasses major seed storage proteins, including 2S albumins (Ses i 1, Ses i 2) and 11S globulins, found in Sesamum indicum. These proteins are heat-stable and resistant to digestion, capable of inducing severe IgE-mediated anaphylaxis in allergic individuals. The tertiary structure is stabilized by conserved disulfide bridges.
